Tasty Baked Meatballs

Ingredients
3 pounds ground beef
1 1/2 cups Italian-seasoned dry bread crumbs
1 (10.5 ounce) can cream of mushroom soup
3 eggs, lightly beaten
1/4 cup grated Parmesan cheese
1 (1 ounce) package dry onion soup mix
Directions:
  1. Preheat an oven to 350 degrees F (175 degrees C). Line two baking sheets with aluminum foil and lightly grease.
     2.  Mix together the ground beef, bread crumbs, cream of mushroom soup, eggs, Parmesan cheese, and onion soup mix. Shape the mixture into balls about the size of a golf ball. Arrange on the prepared baking sheets. 
     3.  Bake in the preheated oven until no longer pink in the center, about 30 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C). 

I found this Recipe on All Recipes.com it is so good I paired it with spaghetti, I also when forming the meat ball put a cube of cheese in the center before baking.. Yum!!

Vichyssoise

A creamy french soup! yum!!

1 T plus 1 tsp. Margarine
1/2 cup sliced leeks
10 ounces cubed yellow or white potatoes
2 cups low sodium chicken broth
1 cup evaporated milk
1/4 tsp. salt
1/4 tsp. pepper
1/4 tsp. ground nutmeg
1/4 cup cream

In saucepan melt margarine, Add leeks and saute until soft. Add potatoes, broth, milk, salt pepper and nutmeg. Bring to boil over high heat, reduce and simmer for 3 min. Remove from heat and cool slightly.

It says to move soup to blender or food processor and puree till smooth, I just used my hand beaters in the pan I cooked it in and it worked out just as well :) Then stir in the cream.
It also says to refrigerate till cool and then serve, but I served it hot and it was sooo good!
